Harvesting from sunrise to noon by hand only and in small crates to avoid oxidation. Grapes are then sorted electronically and manually 3 times. Destemming and slight crushing at 7-8 °C to avoid coloration. Both the free run and pressed juices are fermented in stainless steel with temperature control and then matured on the lees with batonnage, twice weekly.
