Umberto Fiore Moscato d'Asti is an aromatic semi-sparkling wine with half the carbonation of a typical sparkling wine. Extremely aromatic with a famously complex perfume, Moscato d'Asti has a mild level of sweetness, counterbalanced by vibrant acidity. The fruit is soft pressed on arrival at the winery and then kept in a tank at a temperature of 0°C (32°F) until there is a demand for the wine. A cool fermentation via the cuve close method finishes the wine until it reaches an alcohol content of 6.5%, at which point the remaining yeasts are filtered out and the wine is bottled. This preserves a slight residual sugar in the wine, as well as its freshness, with a gentle effervescence. The style is crisp, fresh and lavishly fruity with vivid acidity to enhance the slight sweetness.
